This is a 100% wild ale made in their Authentic Coolship*. After 4 years of using the unique fermentation vessel and understanding the effect the La Sirene team are now ready to release their 1st version. 1 year fermentation – young spontaneous Australian wild ale.

A coolship is a type of fermentation vessel traditionally use in the production of beer. It is a broad, open-top, flat vessel in which wort cools. The high surface-to-mass ratio allows for more efficient cooling. Traditionally, coolships were constructed of wood, but later were lined with iron or copper for better thermal conductivity.
