After 4 years of using the unique fermentation vessel and understanding the effect are we now ready to release our 1st version. 1 year fermentation – young spontaneous Australian wild ale * A coolship (Anglicized version of the Dutch/Flemish koelschip) is a type of fermentation vessel traditionally use in the production of beer. It is a broad, open-top, flat vessel in which wort cools. The high surface-to-mass ratio allows for more efficient cooling. Contemporary usage includes any open fermenter used in the production of spontaneously fermented beer, even when using modern mechanical cooling techniques. Traditionally, coolships were constructed of wood, but later were lined with iron or copper for better thermal conductivity.

Starting life as gypsy brewers in the Victorian Highlands, our artisan brewing adventures swiftly led us to creating their own Urban Farmhouse Brewery next door to the Darebin Creek & National Park in inner-city Melbourne, Australia.
