TASTING NOTES

The Freshest Haze (7% ABV) Galaxy Wet Hop DDH Hazy IPA – Winner of the People’s Choice Award at the 2019 Tasmanian Fresh Hop Festival, this seasonal beer is steeped with a massive 30kg (per 1200L) of fresh Galaxy hops. We picked up the fresh hops ourselves from the HPA Farms at Rostrevor, drove back to the brewery and immediately dumped them into our brew only hours after being picked!

The Mill Brewery was founded by Mirek Aldridge in late 2016. Homebrewer turned ‘probrewer’, the eventual opening of The Mill was a dream for over 10 years.

With a long history of garage-brewed beers on a 70L all-grain system, Mirek finally decided to take the plunge in October 2016, signing a lease on a quaint commercial warehouse in Collingwood. After 6 months of blood, sweat, tears, and a few beers – the brewery opened it’s roller door in March of 2017. The Mill has since grown to a little team of 4 hard-working, beer loving guys. Come down to meet the crew and see what’s on tap!

The Mill Brewery is Collingwood’s favourite local brewery and bar, with a relaxed vibe in an intimate warehouse just off Smith Street.
